Spinach Broccoli Pie

For tonight’s dinner I made a veggie pie with spinach, broccoli and feta cheese. I had some leftover pate brisee dough and I wanted to make something that would give leftovers for lunch tomorrow. This was just right! I love the rich, buttery pie crust that somehow tastes virtuous when paired with all those greens.

Sweet Potato Galette

I used up some leftover pie dough making this vegetable galette. I roasted sweet potatoes and apples in some olive oil and salt and then towards the end of cooking I added feta,spinach, raisins and walnuts. I added some mozzarella on top before baking just to gold the lily.
