Did I ever mention that time I lived in Hanoi? Well, if it gave me anything it’s a love for noodles and fresh fresh flavours.
A yummy summery salad of rice noodles, shaved carrots, cucumbers, shredded chicken, toasted peanuts, mangoes, radish and crispy shallots with a gingery dressing and lots of fresh lime, coriander and mint.
My favourite thing about Vietnamese food is how economical and ethical they are with meat. Most dishes have meat but it’s not the main event, it’s more of a punchy garnish that’s just there to add a little oomph. I served this to one rather carnivorous Irish man with a big appetite who said it was so good on its own it didn’t even really need the chicken. That’s what I call a win for flavour.
