Today was part two in the business section of this course with restaurant guru Blathnaid Bergin. We started several weeks ago (day twenty) but it was right before LitFest and somehow I never got around to writing about it.
Blathnaid is extremely knowledgeable, with over 25 years of experience in the business. She also happens to be Rory and Darina’s sister . The Allens/O’Connells/Bergins are like Ireland’s Kardashians. Each succesful in their own right but a force when combined. Not to mention their fashion sense.
Some of Blathnaid’s top tips include :
- Make your goals SMART. Specific, Measurable, Achievable, Realistic and Timed.
- Unless you write your goals down and take action you may as well be blowing bubbles.
- Make your customers comfortable but not so comfortable that they linger all day. Wifi can actually do more harm than good, and don’t buy a couch or you’ll never get rid of people.
- It’s all about systems. People get emotional, systems don’t.
- Waste not, want not.
I learned : If you want to play music in your business you will need a license. However, if the artist has been dead for 70 years this rule does not apply. Good news for Beethoven fans!
Food of the day : Yoghurt and cardamom creams (leftovers rule) with mango and passionfruit.
Line of the day : ‘If you’re making excuses you’re losing.’ The truth hurts.
