Rhubarb and Apple Crumble

Yesterday a neighbour  gave us some fresh rhubarb from his garden. While it isn’t ordinarily an ingredient I would go out of my way to eat I was in the mood to bake something. I also had some apples that needed to be used up so I made a fruity crumble.

First I chopped the rhubarb -6 large stalks- into rounds. I stewed it for about 15 minutes with a few slices of butter, sugar, vanilla and a glug of Amaretto. About halfway through I added three chopped apples. At first I was concerned about the greenness of the rhubarb but it turned out well in the end.

 

I made the crumble topping using about 150g self raising flour, 100g butter, a sprinkle of oats and some brown sugar. I didn’t follow a recipe because I have made crumbles so many times.

I baked it at 180C for about 30 minutes,left it to cool for another 10 and then had a bowl with a dollop of natural yoghurt. Delish! A very comforting dessert, even heading into summer!
