Hummingbird Cake

It had been a long time since I baked a cake. I wanted to try something new and didn’t care about it being healthy! Enter Hummingbird Cake. I would have tried it based on the name alone but luckily it combines two of my favourite fruits – pineapple and banana. It also has chopped nuts and is topped with a zesty cream cheese frosting. The juicy fruit makes it perfectly moist. It is rich and decadent yet fresh and tropical. God, I love it!  I will definitely make it again.

I used Jamie Oliver’s recipe because I trust him. It turned out great! The only change I will make next time is to leave the pineapple in larger chunks for more texture.
