I am a breakfast person through and through. I always enjoy it but sometimes I think it’s a shame that five days a week I have to eat in the crowded staff room at work and not on a sunny terrace. The weekend is time to linger over something a little more special, and that’s what I did today with Nigella’s oatmeal pancakes.
They ticked all the right boxes for me. An easy, healthy and delicious recipe. The pancakes themselves are not that sweet so they need a special topping. I ate mine with almond butter, a sliced banana and a generous drizzle of honey. They kept me satisfied all morning and through spinning class. Definitely a recipe I will be adding to my repertoire!
