Meal Prep : Chicken Pot Pie, Mexican Lasagne and Granola Bars

I have a very busy schedule this week so I won’t have much time for cooking. In order to feel prepared and avoid getting hangry I spent some time on Saturday afternoon cooking meals in advance to freeze so I will always have something fresh and healthy available.  A stitch in time saves nine!

First I made two ‘Mexican Lasagnes.’ I used my usual method but changed the flavour profile. I added kale and cilantro to the bechamel sauce. I put cilantro in the tomato sauce as well, with a chopped yellow pepper and black beans, and I replaced the noodles with tortillas. One was for dinner tonight and I froze the other for later in the week.  I also made mashed sweet potatoes to eat with it.

Then I made two Chicken Pot Pies. I had some leftover dough so I used it to make a Spinach and Feta Pie that I will eat half of for lunch in work tomorrow. I based it on this Mad Hungry recipe.

I also made some Granola Bars for snacks throughout the week. These are so filling, delicious and economical. They are not beautiful but you can’t have it all!
