I love a good veggie burger. Hearty, light and nutritious, it has got to be one of my favourite meals. They are also easy to make ahead so are a fantastic option for busy days when you need to eat fast!

I prepped these late last night before I went to bed. Then when I got home from work this evening I chopped up some vegetables – peppers, onions, fennel and potatoes – put them in the oven for a quick roast, fried the burgers and dinner was ready in about 20 minutes.

I used :

3 cloves of garlic

1 red onion

1 teaspoon each of ground cumin and coriander

2 400g tins of chickpeas

2 eggs

4 tablespoons plain flour

bunch of fresh coriander

I made these in the food processor. First I put in the garlic and onion and blitzed until they were chopped. Then, I added everything else and blended until I had a mixture that I could shape into balls without it sticking to my hands. I covered them in plastic wrap and left in the fridge until the next evening.

When the time came to eat I heated some oil in a frying pan and cooked the falafel for about 5-7 minutes on each side. I ate mine on a bed of baby lettuce with roasted veggies.
