Peanut Butter, Coconut and Date Granola

One of my favourite activities is going to TK Maxx and browsing the sports bras and kitchen section.  I doubt that shop will ever fail to excite me! This week they had some gorgeous, coloured Kilner jars. I bought a pink storage jar so of course I had to make granola to fill it with. I actually added the peanut butter by mistake because I forgot what I was making but it turned out well, like a dessert granola!

I did not measure any ingredients. Because I have made granola so many times I feel like I know what it’s supposed to look like. I filled the jar with the dry ingredients – oats, walnuts and coconut chips. Then I melted coconut oil, peanut butter, honey and a dash of cinnamon in a saucepan. I stirred the oats into this, spread onto baking sheets lined with parchment paper and baked in a 200C oven for about 30 minutes. I added chopped dates right at the end of baking. I left it to cool and I returned it to the jar.

I know granola is not the most figure-friendly food out there so I usually sprinkle just a little bit over my morning muesli to add flavour and crunch. I also like it stirred into yoghurt as an afternoon snack.
