Nigella Lawson has been one my personal heroes since childhood. While meat is certainly not my favourite thing to cook I will do anything she recommends. I find boneless, skinless chicken breasts can be quite boring but this recipe looked like a yummy way to serve them, and it was! I’ll link Nigella’s recipe here because I did exactly what she told me to do. I served it with baked sweet potato rounds and broccoli sauteed with green beans and mushrooms. Definitely a recipe I will be repeating! I think it will freeze well too, always a plus if you can cook in advance.
