I have been eating the same weekday breakfast for nearly six months and I still love it – berries, yoghurt, muesli and a banana with black coffee. I put frozen berries in a jar and pour yoghurt on top, then leave to defrost in the refrigerator overnight. In the morning I fill it with muesli and bring it to work with me. I’m not hungry when I wake up so I wait until about 8:30 am and eat it right before I start work. I think of it as a ‘Power Jar.’ It is fresh, light but very filling. It’s also a colourful start to the day. Eat the rainbow!
For a mid-morning snack I like to mix fruit, carbs and caffeine. Today I ate an apple, Clif Bar and drank a cup of tea.
For lunch today I ate a tuna bagel. I mixed one tin of tuna in spring water with a spoonful of Herb Mayonnaise, spread it on a toasted bagel and topped it off with fresh rocket leaves and tomato slices.
I am always hungry when I get home from work. Usually I eat an apple with peanut butter and today was no different.
For dinner I made a simple vegan stir fry with peanut noodles. It was very filling but didn’t weigh me down so I was able to go to the gym for a workout and not feel sluggish.
I was hungry again when I got back from the gym. I had a toasted hot cross bun with tea as a snack/dessert. I don’t like to go to bed hungry as my rumbling stomach will wake me up during the night!
