I spend a lot of time thinking about morning snacks. Usually I eat a banana and some walnuts but towards the end of the week I like to treat myself with baked goods like almond croissants or scones. In an attempt to make this craving a little healthier I tried Minimalist Baker’s Banana Nut Muffins. Mine are not vegan, however, as I used a real egg. I also used coconut oil instead of vegan butter. They were yummy! I will be bringing one to work tomorrow morning.
